  • 2 c. yellow squash (fresh, canned or frozen)
  • 1 c. sour cream
  • 1 medium onion, chopped
  • 1/2 tsp. salt
  • butter
  • 1 can cream of chicken soup, undiluted
  • 1 carrot, grated
  • 1/2 tsp. pepper
  • herb crumbs, seasoned (stuffing mix, Pepperidge Farm blue bag)

    Drain squash. Add onion, soup, carrots, sour cream, salt and pepper.

    sprinkle layer of crumbs in bottom. Add squash mixture. Cover with crumbs and generous dots of butter on top. Bake at 350° for 30 minutes.
