Ingredients

  • 2 c. sliced yellow squash, cooked and drained
  • 1 c. sour cream
  • 1 can cream of chicken soup or cream of mushroom
  • 1 grated carrot
  • 1 chopped onion
  • 2 pkg. herb stuffing
  • salt and pepper to taste
  • chicken broth or water (to moisten stuffing)

Directions

    Cook and drain squash (about 10 minutes).

    Add next 5 ingredients.

    In buttered 9 x 13-inch casserole dish, place layer of moist stuffing on bottom.

    Pour squash mixture on top of stuffing.

    Add another layer of moist stuffing.

    Dot with butter and bake at 350° for 30 to 35 minutes.

    Moisten stuffing with chicken broth or water before layering.
