Squid Curry

- 2 1/4 pounds squid cleaned, sliced
- 1 onion small
- 3 garlic cloves sliced
- 1/2 red pepper thinly sliced
- 5 sprigs coriander
- 1 can coconut milk
- 1 tablespoon curry powder
- olive oil
- salt
Directions

1Pour a little olive oil in a pan and add the onion and sliced garlic cloves. Simmer over low heat.

2When the onions start to become translucent, add the pepper and cook for 2 or 3 minutes.

3Add the squid, season it with salt (just a bit, because of the curry) cover the pan and cook until the squid start to get soft.

4Then add the coconut milk and wait for it to boil

5Once it begins to boil, add the curry and coriander. Cover and cook for another 5 to 10 minutes.

6Serve with white rice, as desired.
