Squid Curry

  • 2 1/4 pounds squid cleaned, sliced
  • 1 onion small
  • 3 garlic cloves sliced
  • 1/2 red pepper thinly sliced
  • 5 sprigs coriander
  • 1 can coconut milk
  • 1 tablespoon curry powder
  • olive oil
  • salt

Directions

    Pour a little olive oil in a pan and add the onion and sliced garlic cloves. Simmer over low heat.

    When the onions start to become translucent, add the pepper and cook for 2 or 3 minutes.

    Add the squid, season it with salt (just a bit, because of the curry) cover the pan and cook until the squid start to get soft.

    Then add the coconut milk and wait for it to boil

    Once it begins to boil, add the curry and coriander. Cover and cook for another 5 to 10 minutes.

    Serve with white rice, as desired.
