Ingredients

  • 4 squirrels, cut in pieces
  • 1 stick margarine
  • 1 c. chopped onions
  • 1/2 c. chopped green bell peppers
  • 4 cloves garlic
  • 1 Tbsp. Worcestershire sauce
  • 1/2 c. Burgundy wine
  • 1 Tbsp. chopped green onion tops
  • 1 Tbsp. chopped parsley
  • 1 (4 oz.) can mushrooms
  • 1 Tbsp. flour
  • salt
  • pepper
  • crushed red pepper

Directions

    Cut squirrels into 8 pieces each.

    Season with salt and pepper. Melt margarine and fry squirrels until brown or start to stick to pot.

    Add onions, bell peppers and garlic.

    When vegetables are soft, add a small amount of cold water and Worcestershire sauce. Cover pot and simmer for 1 hour.

    Stir well and add wine.

    Cook until tender.
