- 1 medium squirrel
- salt and red pepper
- 2 large onions, chopped
- 3 stalks celery, chopped
- 1 clove garlic, chopped
- 3 Tbsp. oil
- 1/4 green pepper, chopped
- 4 Tbsp. chopped parsley
- 2 c. uncooked rice, washed
- 1 1/2 c. water
- 2 tsp. salt
Directions

1Cut squirrel into serving pieces and season well.

2Saute in oil until brown; remove from skillet.

3Saute onions, celery, garlic, green peppers and parsley in oil until wilted.

4Put squirrel in until tender.

5Add rice and water.

6Stir thoroughly. Add salt, cook slowly about 30 minutes or until rice is cooked.
