  • roast
  • garlic cloves
  • black pepper
  • 1 c. water
  • 1 tsp. A.1. sauce

Directions

    Trim most fat, then pierce under fat left and put in garlic cloves.

    Season with black pepper (I use coarse ground) and roast in a 325° oven for about 20 minutes per pound.

    Check temperature: for rare 140°, medium 150° and well 155°.

    Pour off most of the fat drippings.

    Add water and A.1. sauce for au jus.
