Directions

1Trim most fat, then pierce under fat left and put in garlic cloves.

2Season with black pepper (I use coarse ground) and roast in a 325° oven for about 20 minutes per pound.

3Check temperature: for rare 140°, medium 150° and well 155°.

4Pour off most of the fat drippings.

5Add water and A.1. sauce for au jus.
