Steaks Pizziola

  • 3 T. olive oil
  • 1 whole garlic clove
  • 1/2 cup diced onions
  • 1 carrot diced
  • 4 thinly sliced round or sirloin steaks, no more than 3 oz. ea.
  • 3 or 4 roma tomatoes diced, or 15 oz. can
  • 2 tsp. fresh oregano
  • 1 sprig rosemary

    1. Gently saute the garlic clove in oil over moderate heat until just barely golden, approximately 3 mins. Remove the garlic.

    2. Add the onions and carrot and continue cooking until the vegetables have softened, about 5 more minutes.

    3. Remove the vegetables and raise temperature to high. Add the steaks and brown the steaks on both sides, about 30 seconds to 1 min. per side.

    4. Reduce heat to simmer, add the tomatoes, oregano and rosemary and the cooked vegetables. Simmer for about 15 minutes. Serve immediately.
