Stewed Chestnut Chicken

  • 1 chicken
  • 1 lb. chestnuts, boiled and shelled
  • 1 green onion
  • 1 tsp. salt
  • 3 Tbsp. soy sauce (dark)
  • 1 tsp. sugar
  • 3 Tbsp. oil
  • 2 slices ginger

Directions

    Cut chicken into small pieces.

    Heat oil in frying pan.

    Add ginger, green onion and chicken; stir-fry until chicken changes color.

    Add salt, sugar and soy sauce.

    Cover and simmer for 10 minutes.

    Add 1/2 cup of water; simmer for another 30 minutes. Add chestnuts; simmer for 15 minutes.

    Serve hot.
