- 1/4 c. olive oil
- 3 lb. beef, in 1 1/2-inch cubes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 1/2 c. dry red wine
- 3 Tbsp. balsamic vinegar
- 2 Tbsp. brown sugar
- 1 (6 oz.) can tomato paste
- 1 tsp. ground cumin
- 1 tsp. ground cloves
- 2 bay leaves
- 2 cinnamons sticks (2 inches each)
- 1/2 c. dried currants
- 2 strips orange zest
- salt and pepper
- 2 lb. pearl onions
- 8 oz. Feta cheese, crumbled
- 3/4 c. pine nuts, toasted
Directions

1Heat the oil in a Dutch oven and brown the meat.

2Remove the meat.

3Add onion and garlic; stir 5 minutes.

4Add wine, vinegar, brown sugar and tomato paste.

5Stir until smooth.

6Add cumin, cloves, bay leaves and cinnamon.

7Add meat, orange zest and currants.

8Add salt and pepper to taste.

9Bring to a simmer. Cover and cook over medium-low heat for one hour.
