Ingredients
- 2 oz. unsalted butter
- 1 onion, finely chopped
- 2 celery sticks, chopped
- 4 Tbsp. flour
- 3 Tbsp. dry white wine
- 3 c. chicken stock
- 1 c. milk
- 4 oz. Blue Stilton cheese, crumbled
- 2 oz. grated English Cheddar
- salt and pepper to taste
- 4 Tbsp. heavy cream
- croutons to garnish
Directions

1Melt butter in saucepan, add onion and celery and fry gently for 5 minutes.

2Stir in flour and cook for 1 minute.

3Remove from heat, stir in wine and stock, return to heat, bring to boil and simmer 30 minutes.

4Add milk and cheeses, stirring constantly; season to taste.

5Puree in blender and reheat without boiling. Stir in cream and serve with or without croutons.
