Ingredients
- 2 oz. butter
- 1 onion, finely chopped
- 2 sticks celery, sliced
- 1 1/2 oz. flour
- 3 Tbsp. dry white wine
- 1 1/2 pt. chicken stock
- 1/2 pt. milk
- 4 oz. Blue Stilton cheese, crumbled
- 2 oz. Cheddar cheese, grated
- salt and freshly ground black pepper
- 4 Tbsp. double cream
- croutons to garnish
Directions

1Melt butter in saucepan.

2Add vegetables, fry gently for 5 minutes.

3Stir in the flour and cook for 1 minute.

4Remove from heat.

5Stir in wine and stock.

6Return to heat, bring to boil and simmer 30 minutes.

7Add milk and cheeses, stirring constantly. Season; stir in fresh cream.

8Rub through sieve or puree in blender.
