- 5 medium potatoes (1/4-inch thick)
- 1 c. boiling water
Directions

1Cook the onion in the oil and butter in a heavy skillet until just beginning to brown.

2Stir in the vinegar and potatoes; pour in the boiling water.

3Cover skillet and simmer, stirring once or twice, until they are done, 20 to 30 minutes.
