  • 34 lb beans
  • 2 tablespoons pork fat
  • 1 tablespoon butter
  • salt

Directions

    Cook beans in salted water to which lard has been added until beans are well cooked and mushy.

    Pass the beans through a wide strainer, pushing them through with hands.

    Place this puree in a pan, make ahollow in the center and add the butter.

    Heat and serve.
