- 3 c. flour
- 2 c. sugar
- 1 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 2 (10 oz.) pkg. frozen strawberries, thawed
- 2 1/4 c. vegetable oil
- 1 1/2 c. chopped pecans
- 4 eggs, beaten well
- confectioners sugar (optional)
Directions

1Sift flour, sugar, baking soda and cinnamon into a large bowl. Make a well in center of flour mixture.

2In another bowl, mix together strawberries and juice, oil, pecans and eggs. Pour strawberry mixture into well in flour mixture.

3Mix together slowly, but thoroughly.

4Pour batter into well-greased loaf pans. Bake at 350° for 1 hour.

5Sprinkle with confectioners sugar. Yields 2 loaves.
