Strawberry Bread Pudding

Ingredients
- 1 (10 oz.) pkg. frozen strawberries, thawed
- 2 Tbsp. cornstarch
- few drops red food coloring (optional)
- 2 slightly beaten eggs
- 2 1/2 c. milk
- 1/2 c. sugar
- 2 Tbsp. butter or margarine, melted
- 1/2 tsp. vanilla extract
- 1/4 tsp. salt
- 4 slices bread, cut into 1/2-inch cubes (4 c.)
Directions

1In small pan, combine undrained strawberries and cornstarch. Cook and stir over medium heat, until mixture thickens and bubbles. Stir in food coloring.

2Spread evenly over bottom of 10 x 6 x 2-inch baking dish.

3In mixing bowl, combine eggs, milk, sugar, butter, vanilla and salt.

4Add bread cubes.

5Stir to moisten.

6Carefully pour custard mixture over berries.

7Bake at 350° for 50 to 55 minutes.

8Serve warm with cream, if desired. Serves 6.
