Strawberry Cake

Ingredients

  • 1/3 c. sugar
  • 1 Tbsp. cornstarch
  • 1/2 tsp. grated lime zest
  • pinch of ground cloves or ground nutmeg
  • 1 pt. basket strawberries (3 1/4 c.)
  • 1 frozen pound cake (16 oz.), thawed
  • 1 (1/2 pt.) container heavy cream, well chilled

Directions

    Combine the first 4 ingredients in saucepan.

    Add 2 cups strawberries; mash strawberries in saucepan with potato masher. Bring to simmer, stirring until thickened.

    Cool to lukewarm.

    Cut cake lengthwise to make 3 layers.

    Spread about 2 1/2 tablespoons of strawberry mixture between each layer.

    Sandwich layers together.
