Strawberry Tapioca Pudding Parfaits

- 1 egg
- 2-3/4 cups milk
- 3 Tbsp. MINUTE Tapioca
- 1/3 cup sugar
- 1 tsp. vanilla
- 1 cup thawed COOL WHIP Whipped Topping
- 1 pkg. (10 oz.) frozen strawberries in syrup, thawed, mashed slightly
Directions

1Beat egg and milk in medium saucepan with wire whisk until well blended.

2Add tapioca and sugar; mix well.

3Let stand 5 min.

4Bring to full rolling boil on medium heat, stirring constantly.

5(Pudding will thicken as it cools.)

6Remove from heat.

7Stir in vanilla.

8Pour into medium bowl.

9Place piece of plastic wrap directly on surface of pudding.

10Refrigerate 1 hour or until cooled.

11Gently stir in whipped topping.

12Layer tapioca mixture alternately with the strawberries in eight parfait glasses.

13Serve immediately.

14Or, cover and refrigerate until ready to serve.
