Strawberry Upside-Down Cake

  • 1/2 c. shortening
  • 1 1/2 c. sugar
  • 1 c. plus 2 Tbsp. milk
  • 2 1/4 c. self-rising flour
  • 2 eggs
  • 1 tsp. vanilla
  • 1 stick margarine
  • 1 c. sugar (save for batter on pan)
  • 1 pt. strawberries, cut up

Directions

    Preheat oven to 350°. Cream sugar and shortening. Add milk and flour alternately. Blend well and add eggs and vanilla. In an oblong cake pan, melt margarine and sprinkle 1 cup sugar over this. Spread strawberries evenly in pan and pour batter over them. Bake until brown and slices are crusty (about 30 to 40 minutes).
