String Bean Salad

Ingredients
- 4 c. fresh whole green beans (about 1 lb.)
- 1/4 c. diced onion
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. olive oil
- 1 Tbsp. red wine vinegar
- 1 tsp. oregano
- 1/2 tsp. powdered mustard
- 1 clove garlic, chopped (optional)
- salt to taste
Directions

1Clean beans and snap off and discard ends.

2Cook beans and onions in boiling water until beans are tender-crisp (or steam beans and onions).

3Drain well.

4In large bowl, combine remaining ingredients and mix well.

5Add bean and onion mixture and toss to coat.

6Cover and refrigerate overnight or for at least 2 hours. Toss salad again before serving.
