Stuffed Artichokes

  • 6 to 8 large artichokes
  • 2 c. Italian-style bread crumbs
  • 1/2 c. grated Romano or Locatelli cheese
  • 4 to 6 cloves garlic, chopped
  • olive oil

    Mix bread crumbs, cheese and garlic in a large bowl.

    Clean artichokes by cutting off the stem and the tips.

    Cleanse artichoke by spreading open each leaf while running under water. Shake water out.

    Stuff artichokes with bread crumb mixture

    by spreading open and filling each leaf.

    Place stuffed artichokes in a large pot; sprinkle olive oil all over artichokes.

    Fill pot with approximately 1 inch of water; bring to a boil.

    Cover and reduce heat; cook for approximately 1 to 1 1/2 hours.

    Keep checking water in pot.

    Add water when water evaporates. Artichokes are done when outer leaves start breaking off.
