- 1 1/2 lb. ground chuck
- 1 c. converted rice
- 1 onion, chopped
- 1 can white Shoe Peg corn
- 1 can tomato soup
- 1/2 c. ketchup
- salt and pepper to taste
- garlic to taste
- 1 c. shredded Jack cheese
- Parmesan cheese
Directions

1Brown meat and drain off fat.

2Add onion, rice and spices. Also add soup and ketchup. Simmer 1/2 hour, stirring, as it will stick.

3Add corn.

4Let simmer until all the juices are gone. Stuff peppers. Sprinkle with Parmesan cheese. Cover tops with shredded Jack cheese and bake at 350° for 1 to 1 1/4 hours.
