- 3 c. chopped onions
- 1 c. chopped celery
- 1 pan cooked cornbread
- 3 c. toasted bread crumbs
- 1 tsp. dried mint
- 2 tsp. salt
- 1 whole catfish (between 5 to 10 lb.)
- 4 c. hot fish stock
- 2 Tbsp. olive oil
Directions

1Saute onions and celery in skillet.

2Break up cornbread and mix with bread crumbs.

3Add mint and salt to bread mix.

4Add hot fish stock.

5Rub fish down with olive oil and stuff with bread mixture.

6Bake in 325° oven until brown.
