  • 3 c. chopped onions
  • 1 c. chopped celery
  • 1 pan cooked cornbread
  • 3 c. toasted bread crumbs
  • 1 tsp. dried mint
  • 2 tsp. salt
  • 1 whole catfish (between 5 to 10 lb.)
  • 4 c. hot fish stock
  • 2 Tbsp. olive oil

    Saute onions and celery in skillet.

    Break up cornbread and mix with bread crumbs.

    Add mint and salt to bread mix.

    Add hot fish stock.

    Rub fish down with olive oil and stuff with bread mixture.

    Bake in 325° oven until brown.
