Ingredients: 2 Tbsp. butter or margarine; 2 medium zucchini, shredded (about 2 cups); 1 medium onion, chopped; 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken; 1 cup KRAFT Mexican Style Finely Shredded Four Cheese; 2 whole chickens (3 lb. each), quartered; 1/2 tsp. salt; 1/4 tsp. ground black pepper; 3/4 cup KRAFT Sweet Honey Barbecue Sauce

1 cup KRAFT Mexican Style Finely Shredded Four Cheese
2 whole chickens (3 lb. each), quartered
1/2 tsp. salt
1/4 tsp. ground black pepper
3/4 cup KRAFT Sweet Honey Barbecue Sauce

Preheat oven to 400F.

Melt butter in medium saucepan on medium heat.

Add zucchini and onion; cook and stir 2 minutes or until tender.

Remove from heat.

Stir in dry stuffing mix and cheese until well blended.

Insert fingers carefully between the meat and skin of each chicken quarter to form a pocket.

Fill pockets evenly with stuffing mixture.

Place, skin sides up, in large roasting pan.

Sprinkle with salt and pepper.

Bake 45 minutes or until chicken is cooked through, brushing with the barbecue sauce after 35 minutes.
