Stuffed Eggplant

Ingredients
- 3 eggplant
- 1 Tbsp. salt
- 3 eggs
- 9 Tbsp. olive oil
- 1 lb. Mozzarella cheese
- 1/2 c. Parmesan cheese, grated
- 1/8 tsp. pepper
- 1/4 tsp. basil
- 1 (6 oz.) can tomato paste
- 2 small onions, chopped
- 1/2 c. bread crumbs
- 1 c. water
Directions

1Slice eggplant in half and scoop out meat.

2Saute onions in 2 tablespoons olive oil.

3Add meat of eggplant plus all other ingredients.

4Add flour to thicken to proper consistency.

5Cook over moderate heat for 10 minutes.

6Let cool.

7Stuff eggplant mixture back into shells.

8Bake in 350° oven 30 minutes.

9Serves 6.
