- 1 lb. ground beef
- 1 eggplant
- green onions, finely chopped
- 1 white or yellow onion, chopped
- 1 clove fresh garlic
- salt and pepper to taste
Directions

1Boil water.

2Wash eggplant and split lengthwise.

3Place eggplant (face down) in boiling water.

4Cook for 10 to 15 minutes. Remove eggplant from water and let it cool, face up.

5Add ground beef to skillet with a little water and cover; scramble periodically.

6When water is absorbed and ground beef is frying, add onions and garlic.

7Mix well.
