- 3 medium eggplant
- 1 small onion, diced
- 1/2 c. tomatoes
- 2 tsp. garlic
- 2 tsp. cooking oil
- 2 c. ground meat (beef or turkey)
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. catsup
Directions

1Cut eggplant in half lengthwise. Wash in vinegar and water. Boil eggplant until tender.

2Drain water.

3Cook onion, tomatoes, garlic and cooking oil on low heat until tender.

4Remove the pulp of the eggplant and add to the cooking vegetables.

5Add meat and seasonings.

6Cook for 5 minutes.

7Remove from heat.

8Fill eggplant shells with mixture.

9Spread catsup on top of filled shells with a spoon.

10Bake in 350° oven until brown.
