Stuffed Eggplant Platter

  • 3 medium eggplants
  • 1 1/2 lb. ground beef (cooked)
  • 1 medium can tomato sauce
  • 1 tsp. garlic salt
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. oregano
  • 1/2 tsp. green onions, minced
  • 18 slices Mozzarella cheese
  • 2 pkg. green beans (frozen)

Directions

    Cut eggplants evenly in half lengthwise.

    With a knife, carefully remove eggplant meat to a bowl.

    Be sure the eggplant shells are 1/2-inch thick.

    Chop eggplant meat in bowl.

    Add ground beef, tomato sauce, garlic salt, salt, pepper, oregano and green onions.

    Mix thoroughly.
