  • 1 dozen Large eggs
  • 1 Tbsp. butter
  • 2 Tbsp. ham, cooked and chopped
  • salt and pepper to taste
  • 1/2 tsp dry mustard
  • 1 onion, minced
  • paprika
  • green onion, chives, or possibly parsley to garnish

Directions

    Boil, peel and cut into halves.

    Remove the yolks and cream them and add in 1 Tbsp.

    butter, 2 Tbsp.
  4. 4
    cooked ham, nicely chopped.
  5. 5
    Season well with salt, pepper, and mustard, and a little minced onion.

    Fill the Large eggs and arrange on a dish or possibly a platter.

    Sprinkle with paprika and serve garnished with sprigs of green onion, chives, or possibly parsley.
