Stuffed Flounder

Ingredients

  • 1 small onion, diced
  • 2 garlic cloves, diced
  • 3 Tbsp. butter
  • 12 oz. small mushrooms, diced (save caps)
  • fresh parsley
  • cayenne pepper
  • black pepper
  • 8 oz. bay scallops
  • 8 oz. crab sticks or sea legs, diced
  • juice of 1 lemon
  • 6 oz. white wine (optional)
  • 6 flounder fillets

Directions

    Saute onion and garlic in butter, add mushrooms and parsley and simmer 5 minutes.

    Add a pinch of cayenne pepper and black pepper.

    Stir in scallops and crab sticks.

    Simmer 7 minutes. Add lemon (wine - optional at this point).

    Place 3 flounder fillets on a baking tray and lay stuffing over each, top with remaining fillets.

    Bake 15 minutes in a 350° oven.

    Makes 8 servings.
