Stuffed Flounder

  • flounder
  • 1 medium onion, diced
  • 1 Tbsp. sage
  • 1/2 c. chopped almonds
  • 4 Tbsp. butter
  • 1 piece celery, diced
  • 1/2 c. water
  • 1 pkg. stuffing (amount used depends on the size of fish)

Directions

    Melt butter and saute onion and celery.

    Add water and bring to a boil.

    Put sage and almonds in dressing (stuffing).
  4. 4
    Pour butter, water and vegetable combination into dressing and mix until all is moist (more hot water may be used).

    Butter flounder liberally and salt and pepper both sides.

    Place dressing in center of flounder. With toothpicks, pin tail to upper part of flounder (above dressing).

    Bake at 350° for 20 minutes.
