Stuffed Mushrooms

Ingredients

  • 12 large fresh mushrooms
  • 4 Tbsp. butter, melted
  • salt and pepper
  • 3 Tbsp. minced peeled onion
  • 1/2 c. pkg. plain dry bread crumbs
  • 1/3 c. finely chopped fresh parsley
  • 3 Tbsp. cream
  • 1/3 c. grated Swiss cheese

Directions

    Heat oven to 375°.

    Remove stems from mushrooms and reserve. Brush mushroom caps with butter and place hollow side up on baking dish.

    Sprinkle with salt and pepper.

    Finely chop the stems and add to remaining butter with onion.

    Cook over medium heat until onions are softened.

    Remove pan from heat, stir in bread crumbs, parsley and cream.

    Season with 1/8 teaspoon salt and 1/8 teaspoon pepper.

    Fill caps and top with grated cheese.

    Bake about 15 minutes until mushrooms are tender and cheese is melted.

    Serve hot.
