Stuffed Mushrooms

  • 1 lb. small fresh mushrooms
  • 2 Tbsp. finely chopped onion
  • 2 Tbsp. margarine
  • dash of black pepper and salt
  • 24 crushed bacon thin crackers (reserve 1 1/2 tsp.)
  • 1 Tbsp. chopped parsley
  • 1 1/2 Tbsp. melted margarine

Directions

    Remove stems from mushrooms and mince.

    Cook minced stems, onion, salt and pepper in margarine until tender.

    Mix onion mixture with crushed crackers and parsley. Sprinkle inside mushroom caps with salt.

    Fill and brush with melted margarine. Top with shredded Mozzarella, if desired.

    Bake in preheated oven at 350° about 20 minutes or until tender.

    Use shallow pan.
