  • 1 pound medium size cremini mushrooms
  • 1 shallot, finely minced
  • 3 tablespoons butter
  • 1/4 pound honey ham, finely minced
  • 1/2 cup fresh bread crumbs
  • 1 egg beaten
  • 2 tablespoons Parmesan cheese, grated
  • 1 teaspoon dried oregano
  • salt and pepper
  • 1/2 teaspoon crushed red pepper flakes

    Clean mushroom and remove stems. Finely mince mushrooms stems. Saute shallot in butter. Add minced stems, sal and pepper, red pepper, and oregano. Saute until soft, about 3 minutes. Add minced ham and fresh bread crumbs. Remove from heat and stir in egg and Parmesan cheese. Stuff mushroom caps with filling. Bake at 400 for 20 minutes. Serves 6.
