Stuffed Mushrooms

  • 1 pound Fresh Mushrooms
  • 1/2 teaspoons Salt
  • 2 whole Green Onions
  • 3 cloves Fresh Garlic
  • 1 cup Crackers (or Half A Package)
  • 1 stick Butter, Melted
  • 1 cup Pecans (very Lightly Toasted)
  • 4 ounces, weight Fresh Grated Parmesan Cheese

Directions

    Wipe mushrooms with damp paper towels to remove any excess dirt.

    Snap off stems and place in a food processor.
  3. 3
    Add salt, onions, and garlic and mix for just a few seconds.
  4. 4
    Next add, crackers, butter, parmesan and pecans and mix for just a few seconds again.

    Blend according to the consistency you desire.

    I personally dont blend it too much, I like a little crunch!

    Next using a butter knife I carefully fill each mushroom cap with the stuffing and lay on a baking sheet.

    When all finished, I grate some more parmesan over all the mushrooms.

    Bake for 20-25 minutes in a 350 degree oven...
