Stuffed Pasta Shells

  • 1 lb. jumbo pasta shells
  • 1 lb. Mozzarella cheese
  • 1 lb. ground beef round
  • 1/2 lb. bulk Italian sausage
  • 2/3 c. soft bread crumbs
  • 1/2 c. milk
  • 2 Tbsp. chopped fresh parsley
  • 1 egg, beaten
  • salt and freshly ground black pepper to taste
  • 4 c. Italian tomato sauce
  • 3/4 c. freshly grated Parmesan cheese

    Cook shells in salted boiling water for 10 minutes.

    Drain and rinse.

    Preheat oven to 350°.

    Dice half Mozzarella cheese; slice the rest.

    In large skillet, brown ground round and sausage and drain off grease.

    Add bread crumbs, milk, parsley, egg and diced Mozzarella cheese to the meat and mix well.

    Season to taste with salt and pepper.

    Fill cooked shells with meat mixture.

    Place half tomato sauce in a shallow 3-quart baking dish.

    Place stuffed shells in dish; top with remaining sauce and sliced Mozzarella. Cover and bake for 30 minutes.

    Serve with Parmesan cheese.
