- 7 medium peaches (ripe)
- 2 Tbsp. butter
- 1 egg yolk
- 1 Tbsp. cognac
- 2 Tbsp. sugar
- 6 macaroons, crushed
- 2 Tbsp. heavy cream
Directions

1Preheat oven to 350°.

2Butter a baking dish.

3Peel one peach. Cut flesh in pieces.

4Cut remaining peaches in half.

5Remove pits and scoop out a bit of the pulp from each half.

6Combine pulp with cut up peach and mash well with a fork.

7Add butter and crushed macaroons, egg yolk, cream and cognac; mix well.

8Fill each peach half with mixture, mounding it slightly.

9Arrange in baking dish and bake 40 minutes.

10Serve hot or cold.
