  • 8 medium bell peppers
  • 1 c. chopped onion
  • 2 cloves garlic
  • 2 Tbsp. chili powder
  • 1 tsp. salt
  • 1 can tomato juice
  • 1/2 lb. sharp Cheddar cheese
  • 1 1/2 c. cooked rice
