- 4 medium red bell peppers
- 1 pkg. Success rice
- 1 c. chopped fresh spinach or 1 pkg. defrosted chopped spinach
- 1 medium tomato, finely chopped
- shredded Asiago cheese
- pepper to taste
Directions

1Slice 1/4 inch off stem end of peppers, discarding seeds and membrane.

2Cook rice.

3Mix rice, spinach, tomato, cheese and pepper.

4Spoon into peppers.

5Place on 10-inch microwave-safe pie plate.

6Microwave on Medium 7 to 9 minutes until peppers begin to soften.
