Stuffed Peppers

Ingredients

  • 8 medium green peppers
  • 1 small onion, finely chopped
  • 1 lb. ground beef
  • 2 Tbsp. fat
  • 1 c. diced, fresh canned tomatoes
  • 1/2 c. soft bread crumbs
  • 1 1/2 c. chopped corn
  • 1 tsp. salt
  • dash of pepper
  • 2 Tbsp. butter, melted

Directions

    Preheat oven to 350°.

    Remove tops and seeds from green pepper. Parboil 5 minutes and drain.

    Brown meat and onion in hot fat. Add tomatoes, corn and seasoning. Pour hot butter or margarine over bread crumbs separate.

    Stuff pepper with ingredients and top with butter bread crumbs.

    Stand upright in greased 11 x 7 x 1 1/2-inch baking pan.

    Add small amount of water.

    Cover and bake in oven for 1 hour at 350°.
