Stuffed Peppers

Ingredients

  • 4 large green or any other colour peppers
  • 2 Tbsp. butter
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 tsp minced parsley
  • 2 cups canned tomatoes, drained
  • 1/4 cup wheat germ
  • salt and pepper to taste
  • 1 egg, beaten
  • 1 cup cooked shrimp
  • 1/2 cup bread crumbs tossed with 2-3 Tbsp. butter

Directions

    Split in half and seed peppers. Steam for 5 minutes and set aside.

    Saute onion in melted butter. Add garlic, parsley, tomatoes and wheat germ. Cook, stirring until soft and well mixed. Remove from heat. Season to taste, then stir in egg and shrimp.

    Stuff pepper halves with mixture and sprinkle with crumbs. Bake in baking dish at 350F for 20 minutes
