- 2 each pointed red peppers
- 1 packages mascarpone
- 1 tsp chopped chilli
- 1 tsp garlic finely chopped
- 1 juice of one lime
- 2 tbsp grated parmesan
- 1 tbsp chopped fresh chives
- 1 dash lea and perrins
Directions

1preheat oven to gas 7

2cut peppers in half lengthwise and deseed

3mix all other ingredients except parmesan and season

4stuff peppers with mascarpone mix and top with grated parmesan

5bake in foil for 15 minutes and a further 15 with foil open

6serve as a starter with bread or light lunch with salad
