Stuffed Peppers

- 6 large green peppers
- 1 lb. ground turkey or beef
- 1/2 c. chopped onion
- 2 c. tomato sauce
- 3 oz. uncooked rice
- 6 oz. shredded cheese
- pepper to taste
Directions

1Wash peppers and cut off tops.

2Remove seeds. Boil (steam) in 1-inch of water for 5 minutes. Brown meat and onion.

3Drain.

4Add tomato sauce, rice and pepper.

5Cover and simmer for 5 to 10 minutes. Stand peppers upright in baking dish.

6Place 1/2 ounce of cheese in bottom of each, then fill with meat mixture.

7Bake, uncovered, at 350° for 25 minutes.

8Place 1/2 ounce of cheese on top of each pepper before serving.
