Stuffed Peppers

Ingredients

  • 1 1/2 lb. ground beef
  • 1 1/4 c. Minute rice
  • 3/4 c. milk
  • 2 eggs
  • 1/2 green pepper, chopped fine
  • 1 Tbsp. onion flakes
  • 1/2 tsp. salt
  • pepper
  • 2 1/2 green peppers, halved and cleaned
  • 1 or 2 cans tomato soup

Directions

    Mix first 8 ingredients well.

    Stuff peppers generously with meat mixture.

    Place in casserole.

    If you have meat left over, roll a few meatballs to put in around the peppers.

    Heat tomato soup with 1/2 can water and 1/2 can milk.

    Pour over peppers and bake, covered, at 350° for 1 1/2 to 2 hours.

    Serve with mashed potatoes and a salad.
