- 1 lb. ground beef
- 1 medium onion, chopped
- 1 (8 oz.) can corn
- 2 c. cooked rice
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 (15 oz.) can tomato sauce
- 5 large green bell peppers
- 5 slices Velveeta cheese
Directions

1Brown ground beef in skillet, stirring until crumbly; drain. Add onion, corn, rice, salt, pepper and tomato sauce.

2Mix well. Slice tops from peppers; discard seed.

3Spoon ground beef mixture into peppers.

4Place in a baking dish.

5Top with a slice of Velveeta cheese.

6Bake, covered, at 375° for 50 minutes.
