Stuffed Pork Chops

Ingredients

  • 6 pork chops (1 1/4 to 1 1/2-inches thick)
  • salt and pepper
  • 1 1/2 c. toasted bread crumbs
  • 1/2 c. chopped apple
  • 1/2 c. sharp Cheddar, shredded
  • 2 Tbsp. golden raisins
  • 2 Tbsp. orange juice
  • 1/4 tsp. salt
  • 1/8 tsp. cinnamon
  • 2 Tbsp. melted butter

Directions

    Cut pocket in each chop along fat side.

    Salt and pepper inside of pocket.

    Toss together bread cubes, apple, cheese and raisins.

    Combine melted butter, orange juice, salt and cinnamon. Pour over bread mixture and mix gently.

    Stuff into pork chops lightly.

    Place in shallow baking dish.

    Bake in 350° oven for 1 1/4 hours.

    Cover with foil; bake 15 more minutes.
