- 6 pork chops, cut 3/4-inch thick
- shortening
- salt and pepper
- 6 Tbsp. uncooked rice
- 6 tomato slices
- 6 onion slices
- 6 green pepper rings
- 1 (28 oz.) can tomatoes
- 1 (4 oz.) can sliced mushrooms, drained
Directions

1In skillet, brown chops in small amount of shortening.

2Season to taste with salt and pepper.

3Place chops in greased baking dish.

4Top each chop with a tablespoon of rice.

5Place tomato slices, onion slices and green pepper on rice.

6Spoon tomatoes over all.

7Cover.

8Bake in 350° oven for 30 minutes.

9Add mushrooms.

10Cover and continue baking for 30 minutes longer. Makes 4 servings.
