- 3 large potatoes, baked
- 4 tablespoons light sour cream
- 1 cup leek (cooked)
- 1 cup onion (cooked)
- 13 cup skim milk
- 12 cup part-skim mozzarella cheese
Directions

1Bake potatoes for 50-55 minutes wrapped in tinfoil at 350F Set aside to cool.

2Cut potatoes in half long ways.

3Scoop out insides, and set aside.

4Mix potato, sour cream, leeks, and onions together in large bowl.

5Mash, and add milk until smooth.

6Add spices, such as basil and summer savory to taste.

7Scoop mixture back into potato halves.

8Placed on lightly sprayed cookie sheet.

9Sprinkle cheese over tops of potatoes.

10Cook for 20 minutes or until tops are golden.
