Stuffed Potato Casserole

  • 9 large potatoes, peeled and boiled
  • 1 c. sour cream
  • 1/4 c. chives
  • 2 tsp. salt
  • paprika
  • 1 stick margarine, melted or soft
  • 1 (8 oz.) pkg. cream cheese
  • 1 garlic bud, minced fine
  • grated cheese

Directions

    Mash potatoes.

    Add sour cream, cream cheese, margarine, chives and garlic.

    Beat together.

    Spoon into buttered 13 x 9-inch casserole dish.

    Cover with grated cheese and sprinkle with paprika.

    Cover dish with lid or foil.

    Bake at 350° for 30 minutes.

    (Dish may be prepared and kept in refrigerator overnight.)
