- 4 large baking potatoes
- 1/2 c. oil
- 4 strips bacon
- 1 c. chopped green onions
- 1/2 c. chopped fresh parsley
- 1 c. sour cream
- 1 c. grated Cheddar cheese
- salt to taste
Directions

1Preheat oven to 375°.

2Rub potatoes with the oil and bake for 1 1/2 hours or until soft when squeezed.

3Allow to cool.

4Cut potatoes in half lengthwise and scoop out pulp, leaving the skin and about 1/2 of pulp intact.

5Place the pulp in a large mixing bowl and set aside.
