  • 2 large baked potatoes
  • 1/2 c. nonfat cottage cheese
  • 1 c. cooked broccoli, chopped
  • 1 tsp. parsley
  • 1 tsp. thyme
  • onion salt to taste
  • Butter Buds to taste
  • 2 Tbsp. grated Parmesan cheese

Directions

    Cut potatoes in half.

    Scoop out centers.

    Mash together all ingredients, except Parmesan.

    Fill shells.

    Sprinkle with Parmesan and a twist of pepper.

    Bake at 350° until heated through, about 15 minutes, if ingredients are cold.
